Globular Cluster Rainbow Treats – Not Your Mom’s Rice Krispie treats

 

This cereal dessert fusion is perfect for mommy-daughter kitchen creativity. It is also a very easy dessert to throw together for a party.

Globular Cluster Treats Recipe

This dessert was inspired by a neighbor's Easter party that included homemade desserts. I decided to give the recipe a shot at home, since my daughter wanted to have more. The rainbow color was critical for matching these with the ones from the party. We got the groceries, remembering the Fruity Pebbles but not the Rice Krispies. So, we just pivoted and used Cherrios. We'd still have the bright color and marshmallow goodness.

Ingredients

3 cups Fruity Pebbles

2 cups Cherrios

1/2 cup of butter

4 cups of marshmallows

Steps

1. Mix the cereals together in a bowl and set aside.

2. Melt the stick of butter on low heat in a sauce pan, and then mix in the marshmallows.

3. Stir periodically until the marshmallows totally melt, and it becomes a liquid instead of a bumpy, puffy, gooey  mess. Continue to stir these on medium heat. I wouldn't recommend going to high, because you really don't want to burn the butter or carmalize the sugar. You have to be a little patient for this part. The mixture should become like very melted taffy.

4. Then, pour over the bowl with cereal and stir. Once its pretty evenly mixed, pour into a greased 9x13 rectangle dish. Glass or steel can work. It doesn't matter much because there's no baking involved. Now, just let it cool for 30 minutes, and eat!

Eating the Last Treat

Here's the real reason I have to make a batch of these goodies.

It all started when my daughter's school friend invited us to an Easter Egg Hunt in their front yard. It was a neighborhood outdoor event, complete with pizza, drinks, and desserts. The card table was full of homemade cookies, rainbow sprinkle cupcakes, blueberry delight, brownies, carrot cake, and Fruity Pebble Krispie treats. I LOVE Rice Krispie treats.

Rice Krispies with Fruity PebblesThey're a guilty pleasure that I'd never even tried to make because of the temptation proximity. So when Kimmy suggested I take home a plate of leftover desserts, I stacked 3 wrapped treats.

Five days later, my daughter looked at me accusingly. "Mommy," she said, "You had two? There were three treats left. One for you, and daddy, and me. You ate mine."

She was right. My husband mentioned liking them. So, I packed them in our lunches at work one day. The next day, I took one just for me. I'd even taken a photo, basking in the colorful and tasty treat at my desk at work. I had the evidence on my phone.

Then she started crying. But to be fair, they'd been in our fridge for 5 days, and I had no idea she even liked them! She's hit or miss with certain desserts. I thought, maybe (crossing my fingers), this would be a miss. What I found out is she had one at the Easter Egg Hunt, and had been eyeing the plate in the fridge. We found a solution - we would get the recipe and make it ourselves!

Tips for Making Your Treats:

  • The melting marshmallows on the stove part is just for grown-ups.
  • Kimmy shared the pro tip of using mini-mallows to get it to blend better.
  • She also suggests trying it with a whole stick of butter.
  • If you are in a hurry, speed up cooling in the fridge
  • Crush the cereal down a bit in the pan to make it a little more dense, and keep it from being too gooey.
  • You can substitute Rice Krispies for any or all the cereal. I was just working with what was in my pantry.
  • If you choose specific cereals, you can make a gluten-free version.
